Sope de Ossobucco
Fresh corn masa sope topped with tender pork shank meat in peanut pipian

Confit pork belly in a fresh, white corn tortilla with a sweet and spicy, Asian-inspired sauce, avocado, white onion, and citrus greens


Course 3

2017 Bodegas Henri Lurton Sauvignon Blanc
Precise, crisp, and pure with notes of grapefruit and jasmine and a hint of mineralogy

2022 Santo Thomas Tempranillo Cabernet Sauvignon
Balanced with mature tannic structure; fruit-forward with currant and toasted notes

Large lamb tamal steamed in a banana leaf and served over refried black beans

Braised Short Rib
Beef short rib served over mushroom risotto with carrots and potatoes

Black Cod al Pippin Verde
Seared 6 ounce filet served on a bed of pipian verde with roasted potatoes and dressed arugula

Mixiote de Pollo con Nopales
Boneless airline chicken breast roasted in banana leaves with a mild ancho and guajillo sauce served with epazote seasoned white rice
